Ginger Lemonade

Summary: I found this recipe years ago in Cooking Light. It's not overly sweet and is an interesting, refreshing version of your standard lemonade.

Yield: 6 servings

Ingredients:

  • 6 cups water, divided
  • 1¼ cup unrefined cane sugar
  • ¼ cup peeled, grated fresh ginger
  • 1¼ cups fresh lemon juice (about 7 large lemons)
  • ¼ cup fresh lime juice
  • lemon and lime slices for garnish, optional
  • candied ginger cubes for garnish, optional

Instructions:

Combine 1 cup water, sugar, and ginger in a small saucepan; bring to a boil, and cook 1 minute or until sugar dissolves, stirring occasionally. Remove from heat; cool.

Strain ginger mixture through a sieve into a pitcher, and discard solids. Add 5 cups water and juices, and stir well. Serve over ice, and garnish, if desired.
